They are know for taking time to source and use only the very best quality, fresh, natural ingredients. They know the provenance of all their ingredients and, where possible, source them locally. Recommended sauces
DILL SAUCE
This classic sauce is primarily a tracklement for Gravadlax and smoked fish.
STRONG HORSERADISH & CREAM
Made with strong, fresh English horseradish root, tempered with crème fraîche. It makes a loveley milder sauce for smoked trout, eel or fish pâtés. Delicious combined with beetroot.
THAI JELLY
This jelly, and its wonderful combination of hot flavours, is delicious with any fish whether roasted or grilled. We think it will be great with prawns. Mixed with vinegar it makes an outstanding dipping sauce.
