When the weather is looking good we think a salmon steak on the grill will be perfect. Salmon steak is ideal for the BBQ with its firm texture that helps it hold together well and it cooks quickly picking up those delicious smokey flavours from the charcoal.
Preparing salmon steaks
You can season and grill salmon fillets or steaks in about 30 minutes so this is a good option if you are feeling time poor. Worth remembering that compared to a steak or sausages salmon is a healthy option, salmon steaks are low in saturated fat but packed with proteins and omega-3 fatty acids.
For the best flavour and results plan to grill your salmon the day you purchase. It will keep however very well in the fridge for at least two days.
BBQ Salmon Steak tips
- Before grilling fish, rinse it and pat dry with paper towels. Removing all the moisture on the outside helps the browning process.
- You can add extra flavour before grilling using spices or herbs thyme, oregano work particularly well. Whatever you choose definitely season well with salt and pepper. Alternatively marinate your salmon steak – 15 to 30 minutes will be enough to add plenty of flavour. We have some marinade suggestions below.
- Light you coals early and wait until they are white before cooking. if possible push the coals to one side so you can cook the fish on the other. Salmon steaks are best cooked on a medium heat. You can test the heat with your hand – its medium heat if you can hold your hand just above the grill for about 4 seconds.
- Grill without a lid for a few minutes each side. When it is cooked the steak begins to flake when prodded with a fork. You can see the cooking as it changes from the more translucent orange to a creamy pink. Turn the fish once halfway through grilling. If needed baste with you marinade or a little olive oil to prevent it drying out
Soy sauce marinade
In a small bowl, stir together equal amounts of soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a close fitting dish or large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Allow at least 30 minutes before cooking
Lemon Dill and Caper marinade
Combine 150 ml olive oil, Two chopped garlic cloves, juice of one lemon , tablespoon each of capers, dill and lemon thyme in a large bowl. Season well with sea salt and pepper. Place salmon steaks in a single layer, in a large dish. Pour over half the marinade. Turn fish portions over and pour over remaining marinade. Cover. Refrigerate for 2 to 4 hours to marinate. Remove from fridge 30 minutes before cooking.
