Plaice are one of the most popular flat fish in the UK and around Europe. As a flat fish it is adapted for living on the sea bed where it feeds on clams, crabs and other shellfish. They tend to feed at night in shallow water, during the day they bury themselves in the sand. It has a distinctive brown skin with bright orange spots, the underside is white.
The preparation time for this will be about 5 minutes. Allow about 8 minutes for cooking time. The ingredients listed below will serve 4 people.
Ingredients For Stuffed Rolled Plaice
4 plaice fillets, skinned from Walter Purkis & Sons
300g basmati rice
160g green beans, trimmed
160g asparagus tips
1tbsp olive oil
1 small leek, shredded
3 lean rashers bacon, chopped into small pieces
Cooking Method For Stuffed Rolled Plaice
Cook the rice according to the packet instructions, drain, keep warm and set aside.
Steam the green beans and asparagus until just tender. Set aside and keep warm.
Heat the oil in a large frying pan. Add the leek and bacon and cook for 2 minutes until they become soft and are beginning to colour. Transfer onto kitchen paper and dab off any excess fat.
Place the fish onto a board and halve the fillets length ways. Spoon the leek and bacon mixture onto the fish strips . Roll the fillets up and place in a suitable dish, spooning any remaining leek and bacon over the fish. (You can use a cocktail stick to keep them in shape before they are cooked).
Add 1tbsp water and cover the dish with cling film. Cover and cook in a microwave oven on HIGH for 3 minutes 30 seconds.
Serve the fish right away with the rice, green beans and asparagus, with a grind of black pepper.
