About Mackerel

Mackerel is a sustainable fish very common in the waters around the UK. Abundant in cold and temperate shelf areas, they form large shoals near the surface. They overwinter in deeper waters but move towards the coast to feed on small fish and prawns during the summer.

Mackerel are very recognisable with iridescent silver and blue striped skin and deeply forked tails. Mackerel is a delicious nutritious fish, with intense creamy meat that packed with omega-3 fatty acids.

The quantities  below are for four people. Allow about 20 minutes for preparation and cooking time.

Mackerel With Mustard Sauce Ingredients

4 Mackerel from Walter Purkis and Sons – cleaned and filleted
I large onion finely chopped
2 large sprigs of fresh thyme
1 bay leaf
Small bunch of flat leaf parsley
A large glass of white wine
2 tablespoons grained mustard
50g butter diced
Sea salt and freshly ground pepper

Cooking Mackerel With Mustard Sauce

Preheat your oven to 240 oc/475 o / Gas mark 9

In a roasting dish that has been lightly greased with some butter make a bed of the chopped onion and the thyme, bay leaf, and several sprigs of parsley  – retain some for chopping as a garnish at the end.

Season the Mackerel fillets well with salt and pepper and then place on the onion bed with the skin side up. Pour the glass of white wine over the fish fillets.

Put the dish into the oven and bake for about 7 to 10 minutes – Larger fillets will need a little bit longer than a thinner ones. Take care not to overcook.

Transfer the fish to a warm serving dish.

To make the sauce, strain the cooking juice from the roasting pan into a saucepan (discard the onion and other ingredients). Boil hard for a few minutes which will reduce the volume and help to concentrate the flavours.

Next add the cubed butter and the mustard keep whisking it until the butter has melted allow it to simmer for a few minutes then pour over the Mackerel fillets and serve right away garnished with a little chopped parsley.

Serving Suggestions for Mackerel With Mustard Sauce

This will be perfect served with some crushed new potatoes and some green vegetable such as broccoli or spinach.
