This spicy Mexican prawns recipe is not only delicious but quick and easy to prep and cook. It will be a hit with the whole family.

Allow 10 minutes fro the preparation and a further 15 minutes for cooking. Ingredients below will serves 4.

Ingredients For Spicy Mexican Prawns

400g raw, peeled, large prawns
2 tbsp sunflower oil
1 large onion, sliced
1 red pepper, de-seeded and sliced
1 green pepper, de-seeded and sliced
Juice 1 lime

To serve

8 flour tortillas or wraps
8 tbsp low-fat soured cream
200g tub fresh salsa
200g tub guacamole
Sliced jalapeños (optional)
Grind of black pepper

Fajita Seasoning

½ tbsp hot chilli powder
2 tbsp sweet smoked paprika
1 tbsp ground cumin
1 tbsp garlic powder
½ tbsp ground coriander
1 heaped tbsp dried oregano

Cooking Method For For Prawn Fajitas

To make the fajita seasoning mix all the ingredients in a bowl and mix to combine.  The quantities above will make enough for several meals so keep the extra in a jar for future use. If you are short on time there are lots of ready made versions available.

Heat the oil in a large frying pan, add the onion and peppers and cook for a couple of minutes until they begin to soften.

Add the a spoonful of fajita seasoning and prawns to the pan. Stir well to ensure that everything is coated evenly in the seasoning and cook for a few more minutes until the prawns have turned pink and are cooked through. Squeeze over the lime juice.

While the prawns are cooking, heat the tortillas according to packet instructions.

Serve the prawns with the warmed tortillas, soured cream, salsa, guacamole and some jalapeños if you like a little extra heat. Finish with a grind of black pepper.
