This one pot cod recipe with lots of healthy green vegetables, tomatoes and potatoes is ideal for lunch or dinner, its a quick and easy roast that happens all in one pot which means minimum mess in the kitchen.

This recipe comes for local blogger Muswell Hill Independent who have their fingers on the pulse of all things that are happening in N10 – including tasty fish cookery.

The ingredients below are for two servings however it is easy to scale up for more people.

Ingredients For One Pot Cod Recipe

500g of Cod from Walter Purkis & Sons
4 rashers of bacon (roughly chopped)
350g new potatoes – rinsed and cut in half
1 lemon – cut into quarters
4 cloves of garlic – peeled
A big handful of roughly chopped green vegetables (green beans, sugar snaps, broccolli, courgettes etc.)
Butter
Salt & pepper
A big handful of cherry tomatoes – chopped in half

Cooking Method For On Pot Cod Recipe

Pre-heat oven to 180 degrees celsius.  Select a large oven proof dish or pan that is large enough hold all the ingredients.

Place potatoes in a saucepan of cold water and bring to the boil. Once they’ve come to the boil drain the water and set them aside. They’ll continue to cook when they go in with the fish.

In your roasting dish, add a splash of olive oil, add the chopped bacon and place in the oven, cook the bacon on its own for just a few minutes, until it starts to sizzle.

Add potatoes, garlic and lemon quarters (rubbing the cut sides of lemon in the oil and placing skin down). Put back in the oven for approximately 10 mins.

Add green vegetables to roasting dish, place fish on top with some chunks of butter and a few grinds of salt & pepper. Put it all back in the oven for another 10 – 15 mins, until fish is cooked through.

With 5 minutes cooking time remaining, add cherry tomatoes.

Eat right away.
