This recipe takes a humble baked potato and turns it into a luxe treat. The usual toppings are replaced with lobster, smoked bacon and apple.

Preparation time will be about 5 minutes. Cooking time will be a further 15 minutes. Quantities will serves two people.
Ingredients For Lobster, Smoked Bacon And Apple
2 small or 1 large cooked lobster tail sliced from Walter Purkis & Sons
4 rashers smoked bacon
1 Apple peeled and cut into batons
1 large baking potato
50g Grated Cheese
Cooking Method For Lobster, Smoked Bacon And Apple
First cook the potatoes in the microwave until they are soft. Then place into a hot oven for about 30 minutes in the oven until fully cooked and have a crispy skin. Remove and cut in half length-ways lightly mash/fluff the contents with a fork .
Place you bacon rashers in the oven and cook slowly to a golden crisp.
Heat your grill and lay the potato halves under the heat, cut side up, to brown. In a pan melt knob of butter and lay in the sliced lobster to warm through.
Once the potato halves take on a bit of colour place them on a tray cut side up. Transfer the warmed lobster slices on to the potatoes, sprinkle on the apple batons and then the cheese, place under a hot grill to melt the cheese.
Serve right away with a crisp salad.
As an alternative to apple, you could try using radish batons instead or both.
