Dressed Crab from Walter Purkis And Sons
When in season dressed crab are one of the most popular items on our counter. For good reason, what could be nicer than a fresh crab that is delicious, ready to eat and all the prep work is done!
The dressed crabs on our counter are brown crabs from waters around the UK. These large crabs are known for the excellent flavour of the meat. Typically we source our crabs from Cornwall sometimes from Scotland – depending on the best quality available in the market. Brown crab are also known as “common crab” or the “edible crab”. Ingredients below are for four people, its very easy to scale up for more people.
Ingredients For Crab Salad With Mango And Avocado
200g mixed salad – baby leaves are good and some rocket/watercress adds some peppery flavour
300g crab meat from Walter Purkis & Sons
1 ripe mango, cut into small chunks
1 avocado, sliced
4 spring onions, thinly sliced
Small red chilli, deseeded and finely chopped
Handful of thinly sliced cucumber
Handful of cherry tomatoes, quartered
Handful of mangetout, thinly sliced
Small handful of parsley, roughly chopped
Crab Salad Dressing
1 tbsp sweet chilli sauce
1 tbsp olive oil
Juice and zest of 1 lime
Salt and Pepper Seasoning
Cooking Method For Crab Salad With Mango And Avocado
First make your dressing by whisking the sweet chilli sauce, olive oil and lime juice and zest in bowl. Sason to taste then put to one side and let the flavours combine.
Dice your mango and avocado. Next arrange the salad leaves in a large serving bowl, add the crab meat, mango, avocado, spring onions, cucumber, tomatoes, mangetout and parsley.
Pour over the dressing and toss lightly but thoroughly, then taste for seasoning and add a little more salt and pepper if needed. Arrange the colours for a good looking presentation. Sprinkle over the finely chopped red chilli for a spicy garnish.
