Ingredients For Cod With Pesto Crust

2 cod fillets from Walter Purkis & Sons
1 tsp olive oil
2 tbsp fresh pesto
25g grated parmesan
salt and freshly ground black pepper

Cooking Method For Cod With Pesto Crust

Heat the oven to 180c. Lightly oil a piece of foil or baking parchment and place in a baking dish.

Put the fish in the foil and spoon over 1 tbsp of fresh pesto; top with the grated parmesan. Wrap up the parcel and cook for 10 minutes.

Unwrap the parcel and cook for another 5 minutes for the cheese to brown.

Serve with vegetables/potatoes with the cooking juices poured over.
