A smoked mackerel wrap makes a tasty lunch in the warmer weather. Lovely to eat in the garden or picnic. You can also take one as a healthy but satisfying lunch at work. Mackerel are a healthy choice as they are rich in omega 3 oils. Very quick and easy to make with the bonus of there being no cooking required (we have done it for you in the smoker!).
Local Smoked Mackerel
The smoked mackerel sold through our shops is smoked in the century old smoke house at the rear of the Crouch End (N8) Shop. So what you see on our counter are truly local food products. These are made with traditional skills and recipes that have been handed down through the family for at least six generations. Ingredients For Smoked Mackerel Wrap
4 smoked mackerel fillets from Walter Purkis & Sons
100g reduced-fat soft cheese
4 tbsp. low-fat plain yogurt
1 tsp. chives, chopped
4 flour large tortilla wraps
½ cucumber, cut into strips
Small bag of mixed baby leaf salad
1 small red onion, thinly sliced
Cooking Method
To prepare the wraps, remove the skin from each of the mackerel fillets and break into flakes using a fork. Season with salt and pepper to taste. You can choose peppered fillets in the shop if you like things with a bit more kick.
Mix the soft cheese and yogurt together. Stirring in the flaked mackerel.
Fill the wraps with a row of the cut cucumber, salad leaves, red onion and the top with the mackerel mixture. Sprinkle over the chives and roll up each tortilla tightly to serve.
This is a very easy recipe to customised try adding sundried tomatoes or caramelised onion hummus to the filling for a Mediterranean flavour. Try using crab meat or prawns instead of the smoked mackerel for a seasonal twist.
