Try this tasty prawn skewers recipe. It is an ideal summer BBQ recipe that is really easy to cook and prepare. It will be very popular with the whole family. You can use different types or sizes of prawn with the shells on or off – just adjust the cooking time up or down for larger portions. Ingredients For Prawn Skewer Barbecue

Allowing at least 5 large prawns per person (you could use lobster or langoustine instead)
25ml olive oil
2 garlic cloves finely chopped garlic
sprig of fresh rosemary finely chopped
2 large pinches smoked paprika
Ground black pepper
chunky sea salt
Zest and juice of 1 lemon

Cooking Method For BBQ Prawn Skewers

To make the marinade whisk the olive oil, garlic, lemon zest and juice together with the salt, pepper and rosemary.

Thoroughly cover the prawns with this marinade, but keep some aside and refrigerated. Leave them to marinate, also in the fridge, until you’re ready to cook and immediately serve.

If you are using charcoal make sure you light it in good time so that it is up to temperature when you want to cook. (You can see it is ready when the coal is white all over)

Put the marinaded prawns onto a skewer. (If you are using wooden or bamboo skewers soak them in water for 30 minutes to prevent them from burning over the coals)

Barbecue for only about 3 minutes each side, until the prawns have completely changed colour from blue grey to orange pink.

Drizzle on some of the reserved marinade (but NOT from the bowl you had the raw prawns in!), shake over a little paprika.

Serve right away with some fresh bread and some green salad.
