These Mexican Cod Tacos are easy to make and a fun way to feed friends and will be popular with the whole family. Tacos make a perfect meal, they are filled with protein, wrapped in carbs and topped with fresh veggies. You get all the nutrients and calories you need in one perfect package. This recipe calls for some soft flour tortillas but it would work just as well with a crisp version if you prefer more crunch.

Quantities below are for two people

Ingredients For Mexican Cod Tacos

2 x 140g  cod fillets from Walter Purkis & Sons – skin removed.
2 tbsp chipotle paste
1/2 lime, juiced
1 1/2 tbsp vegetable oil
4 small Mexican corn tortillas, soft
1 onion, halved and sliced 1/4-inch thick
1 green pepper, sliced 1/4-inch thick
Pinch of salt
1 small ripe avocado, sliced
Handful of coriander leaves, roughly chopped

Cooking Method For Mexican Cod Tacos

Slice the cod into approx 2cm chunks and toss with the chipotle paste, lime juice and 1/2 tsp olive oil. Leave to marinate for 10 minutes.

In the meantime, heat the rest of the oil in a heavy bottomed frying pan over a medium heat.  Cook the onion, pepper (If you like some extra heat you can add some fresh red or green chopped chilli at this stage) stirring well to coat the vegetables all over in the oil and a pinch of salt to season. When the onions start to brown, after 5 minutes, turn down the heat, stirring occasionally until softened.

Add the cod and cook for 7  minutes until the fish starts to flake apart and the vegetables are tender but still with some crunch.

Heat a grill pan and warm the tortillas.

Assemble the tacos with the vegetables, cod and avocado slices, topped with the chopped coriander. Drizzle with a little hot sauce if you like some extra spice
