Cod with pea purée is a great recipe putting a tasty twist on traditional fish chips and mushy peas.

Preparation time will be about 10 minutes, cooking time will be 10-12 minutes. The ingredient quantities below are to serve two people.

Ingredients For Cod With Pea Purée

2  200g Loin of Cod pieces from Walter Purkis & Sons
200g Frozen garden peas
2 Sprigs fresh mint, leaves chopped
1 tsp Mint sauce
1 tbsp Crème fraiche
200ml Fish or vegetable stock
Butter
Olive oil
Salt and freshly ground pepper
Flour

Cooking Method For Cod With Pea Purée

To make the pea puree, cook the garden peas in the stock and then either crush or purée them in a food blender.  Add a glug of olive oil, a spoonful of mint sauce, crème fraiche and then some chopped fresh mint. Season to taste. Put to one side and keep warm.

Cut your potatoes into thick diagonal slices, par boil, drain well and allow to dry before frying.

Preheat your  oven to 180C.

Season the flour with salt and pepper and roll the cod portions in the seasoned flour. Add a glug of the olive oil and a knob of butter to a hot pan and then place the cod skin side down. Keep frying for 2 to 3 minutes until the skin is crispy.

Transfer the cod right away to a hot oven for 8-10 minutes until cod cooked is through. Cooking times will vary according to the thickness of your cod loin so do look at it several times. The Cod will be cooked when it flakes easily and it changes from translucent to opaque.

Serve on the pea purée with the sautéd potatoes. Garnish with a little more of the chopped mint or some shavings of lemon zest.
