Try these tasty cod burgers they are very tasty and very quick to cook. The recipe will work well under the grill in the pan or on your BBQ.

Prep time for these cod burgers will be about 5 minutes with a further 6 minutes for cooking. The quantities below are to serve 4 people.

Ingredients For Cod Burgers

2 cod fillets from Walter Purkis & Sons
2 tbsp red curry paste
2 tbsp coriander, chopped
1 tbsp brown sugar
2 dashes of lime juice
2 dashes of fish sauce
4 spring onions, finely sliced
Seasonal salad and buns to serve

Cooking Method For Cod Burgers

First mince the cod in a food processor* along with the curry paste, coriander, brown sugar, lime juice and the fish sauce.

Spoon into a bowl, season well with salt and pepper and mix in the finely chopped spring onions. Divide the mixture into 4 and shape the burgers patties by rolling the mixture into a balls before flattening between your hands.

For best results refrigerate the uncooked burgers for 2 hours. This will firm them up and prevent them from collapsing when in the pan or on the grill.

When you are ready to cook your burgers, grill them at a fairly high heat or BBQ them (for approximately 3 minutes each side), or pan fry on a medium heat for a couple of minutes on each side, so that the burgers take on a bit of colour on each side and are cooked through.

Serve on a toasted burger bun with some seasonal salad and perhaps even a spoonful of yoghurt.

*(If you don’t have a food processor finely cut the fish into a bowl and then add the curry paste, coriander, brown sugar, lime juice and fish sauce and mix together.)
